I love me some homemade soup!

Recipe:
1 c. lentils
3-4 c. water or broth of your choice
1/2 c. chopped onions
1/2 c. chopped fennel
2-3 cloves chopped garlic
2-3 Tbsp olive oil
handful cilantro
salt/pepper to taste
Bring lentils to a boil in the water/broth. Simmer for half an hour while you saute onions, fennel and garlic in olive oil. Don’t let them brown. When onions and fennel are translucent, add to lentils. Add salt and pepper, and water if necessary. When the lentils are soft, add cilantro and serve immediately. Drizzle 1 Tbsp olive oil into soup, if desired for flavor. YUM!
